Let us talk today about The Foundation. A cozy, quirky hipster restaurant on Main Street in Vancouver. For the life of me I can't find a link to their website. Which is such a shame because their menu is all vegan + vegetarian and all delicious, and I'd love to share it with you. </div>

I've been on the veg wagon for 24 years and I still get excited when I see a menu that I can order almost anything from. My favourite dish at the Foundation is Molten Tofu - a mixture of black beans, tofu, broccoli & spinach, and amazing peanut sauce. I first visited this restaurant a couple of decades ago, (ffs I'm old!) and this dish, or variations of it, have been a staple for me at home ever since. What can I say? Peanut Sauce, black beans, broccoli and tofu are just meant to be together. </div>

I snapped up a photo of my co-worker's lunch, but I forget what it's called. It's a collision of mango, black beans and quinoa, and it's super scrumptious. She orders it every time we go there. </div>

They have mostly non-veg stuff on the menu, but I love them for serving veggie burgers and veggie dogs that don't taste like cardboard. And they make a killer lemonade.<br />

Voluntary participants make a pledge to do (or not do) something for 30 days. Health or hobby, it doesn't matter, just commit to something. </span></span><br />

I typically drink about 3 cups a day, and by "cup" I mean a venti-sized travel mug from Starbucks. </span><span style="font-family: Arial,Helvetica,sans-serif;"><span style="font-family: Arial,Helvetica,sans-serif;">My pocketbook will surely thank me now that I won't be ordering $6.00 lattes all the time.</span> And if I stick with it, maybe, just maybe those migraines I get when I haven't had a drop of coffee in 24 hours will be a thing of the past.</span><br />

He's really on to something with his juice crusade. Even my 6-year-old is a big fan of this vibrantly coloured juice.</span><br />

Unfortunately she dropped the bento box and the lid broke off, so it's kind of tricky to keep her lunch intact. Lately I've just been putting her food in a bunch of little containers inside an insulated lunch bag - which doesn't make a very appealing presentation. <br />
<br />
So broken lid aside, here's today's lunch: In the back row, blueberry cinnamon oatmeal and a packet of roasted seaweed. It looks like a big package but there's only a few sheets in it and she absolutely loves them. These don't fit in the lunchbox when the lid is closed, but they all get put in the same carrying bag.<br />

Now I'll go clockwise, starting with the brown rice spaghetti & tomato basil sauce, banana tofu, Sharkies (one of the <br />
few gummy snacks that are gelatin-free) , sesame rice crackers, Annie's cocoa & vanilla bunnies, home made banana blackberry oatmeal muffin, dill pickle, and half of a navel orange with strawberry slices.<br />

It may look like a lot of food, but it has to be enough for breakfast, lunch and snack time. My first thought was <a href="http://www.tofurky.com/tofurkyproducts/holiday_products.html">Toforky</a>. It's easy for a non-veg person to prepare, and it's widely available in our city's major supermarkets.<br />

But <a href="http://www.gardein.com/foods_we_make.php">Gardein</a> also has a huge variety of meatless proteins too. In fact, I have yet to try one that I don't like. My faves are the mandarin orange crispy chick'n and the turk'y cutlets. And as I'm looking at their website right now, there are some new items that I haven't even see in stores yet. Breakfast patties and meatless meatballs?! Yum! This kind of stuff is a treat for me because I make so many of our meals from scratch.<br />
<br />
And this reminds me, last week my (non-veg) aunt made us spaghetti and she crumbled up a couple of veggie burger patties in the sauce to make it nice and hearty. It was such an easy thing for her to do, and made our dinner extra nutritious. Love her! Unfortunately I didn't take a photo of it, so I'll leave you with these butterscotch walnut cookies that I made recently.<br />

What better to do with a couple of pounds of freshly picked Strawberries? Bedsides jam, which I will also be making a lot of before the summer is through.<br />

My ice cream machine is a <a href="http://www.cuisinart.ca/cuisinart_product.php?item_id=308&product_id=351&cat_id=27">Cuisinart Ice-21C</a> and it is ridiculously easy to use. Just pour a bunch of stuff in the bowl and let it mix for 15 minutes. Seriously, that's all I did to make this frozen strawberry dessert. Mashed up strawberries, a glurp of soy milk and 1 tbsp of sugar. Easier than pie.<br />

I swear I did nothing to enhance or modify the colour in the image. The strawberries were beet-red all the way through - unlike the California strawberries that are usually available year-round at our local supermarket that are white on the inside.<br />

Today was "ice cream day" at my daughter's school so I sent along a small container of this for her to enjoy while her classmates eat traditional ice cream made with cow milk (thankfully they have a freezer available to keep it frozen until snack time).<br />

I remember there being a contest where you had to "dress up" a zucchini as if it were a person, and mine had bright pink hair made from Mr. Noodles and food colouring, and arms made of green onions with the roots dangling at the end like little fingers. I remember it well because I won first prize.

Fast forward to present day. My aunt recently gifted me with a <i>giant </i>zucchini. Giant as in, I shredded it in the food processor and ended up with 8 cups of zucchini! What to do with it...well, most of it ended up in the freezer until I figure out what to do with it.<br />
<br />
But I dug up my tattered old Zucchini Cookbook that my mom had kept from that year I won the Zucchini Festival. The cookbook is full of horrible typos and 12 different fonts, but it's also full of love, from all the moms and teachers that submitted their favorite zucchini recipes during the festival. My mom's recipe for Zucchini Pineapple is on page 1. There's a couple of recipes for chocolate zucchini baked goods, which inspired me to make Chocolate Zucchini Muffins.<br />
<br />
<b><u>Chocolate Zucchini Muffins</u></b><br />
3 tbsp ground flax + 6 tbps water (or other egg replacer equal to 3 eggs)<br />
1 cup sugar<br />
1/2 agave nectar<br />
1/2 cup coconut butter spread (or earth balance soy butter)<br />
3/4 cup coconut milk (or other "milk")<br />
7 tsp cocoa powder<br />
1 tsp vanilla<br />
2 cups, grated zucchini<br />
1 cup whole wheat flour<br />
2 cups unbleached white flour<br />
1 tsp sea salt<br />
1 tsp cinnamon<br />
1 1/2 tsp baking powder<br />
1 tsp baking soda<br />
1 cup chocolate chips<br />
<br />
Preheat oven to 350<br />
Using an electric mixer with large bowl, combine flax + water, sugar and agave. Add in "butter", "milk" and grated zucchini. Stir until mixed. In a separate bowl, sift all of the dry ingredients except chocolate chips. Slowly add the dry ingredients to the wet and stir until fully incorporated. Stir in chocolate chips. Pour into muffin liners or lightly greased muffin tins. Bake for 35-40 minutes.<br />

They have a wide variety of salts flavoured with unexpected ingredients like berries, truffles and olives. And they have an authentic extra virgin olive oil that comes from their family in Spain.<br />

I'm a big fan of rock salt (I haven't used regular table salt in years). The first thing I made using their Salt with Wild Mushrooms and the olive oil was a chunky salsa. Deeelicious! In fact I've been using this salt in everything from wild rice and stirfry to popcorn, and I love it.<br />

Pasta salad with a balsamic vinaigrette dressing and peas, corn & broccoli, soda crackers filled with pupkin seed butter & strawberry jam, a few organic cookies, Sun Rype fruit bites, a juice box, celery matchsticks, strawberries sprinkled with ground flax, 2 pieces of gardein chick'n strips and ketchup for dipping, and a "bat" sandwich (multigrain bread with vegan cheese). It's her new favourite. Apparently she ate the "bat" for breakfast and then cried because she wanted another one. Also no pictured is a packet of maple oatmeal. <br />

Baby girl ate the entire lunch except a few lone spirals of pasta and the celery sticks, which she never eats anyways. And then she refused to eat dinner because she wasn't hungry.<br />

She ended up having lunch with abuelo (grandpa).<br />

Today's lunch colour is <span style="color: black;">green</span>. I was overwhelmed with green produce in my fridge, so there was no shortage of choices, but it was tricky trying to balance protein and carbohydrates. I didn't just want to make a lunchbox full of salad.<br />
<br />
So here we've got soba noodles, which baby girl pointed out are not green. True, but it's got a pretty decent amount of protein and, hey, buckwheat is green at some point before it's harvested. Next is a mixture of peas and lima beans. I'm fairly certain that each and every lima bean will still be in the lunchbox when she comes home, but it's worth a shot. Moving along, there's some cucumber slices tucked into the side compartment with a fun green turtle fork, kiwi fruit and an ancient grain quesadilla stuffed with daiya cheese and cilantro.<br />

Beginning in the top left corner, there's Gardein's <a href="http://www.gardein.com/products.php?t=frozen&p=32">Mandarin Orange crispy chick'n</a> piled on a bed of organic brown rice and sprinkled with sesame seeds, Pete's organic mango tofu, pumpkin pancakes (mini-container of maple syrup not pictured), and a blood orange. <br />

This week's theme at my daughter's daycare is <i>colours</i>. <span style="font-family: Arial,Helvetica,sans-serif; font-size: small;">So natu</span>rally, I was excited to incorporate the theme into her lunch box. Each day this week I'll focus on a different colour. Today I chose red. </div>

The Roma tomato quesadilla is stuffed with refried beans and Daiya cheese. There's a red cabbage coleslaw (oops, I forgot the sunflower seeds!) strawberries sprinkled with ground flax, and an Ethiopian-style stew with red & white nugget potatoes, chickpeas, carrots and a dash of cayanne and other spices. </div>

of her brightly coloured lunch, I found myself intrigued and did a little
bit of research. Lance Armstrong's website <a href="http://livestrong.com/">livestrong.com</a> contains a wealth of information about the benefits of coloured food.</span><br />

Unfortunately my creation lacked a very important element - deliciousness.<br />

Unsweetened vanilla almond milk, banana and kale do not make tastebuds dance. At least not mine. I attempted to save my green potion by adding blue agave nectar, but this stubborn smoothie was just not meant to be saved.<br />

Sometimes I'm exhausted after a long commute home and I just want to throw something easy together. So here's one of those meals that takes very little preparation and allows me to unwind and relax while it's cooking.<br />

<a href="http://www.gardein.com/products.php?t=frozen&p=4">Gardein Crispy Tenders</a> - delicious, packed with protein and easy to bake in the oven. I mixed up some agave nectar with mustard for a dipping sauce. <br />
<br />
Veg spring rolls - one of my all time favourite foods in general. Plus they are easy to pop in the oven and these mini spring rolls only take 12 minutes to cook. By the time I toss them in the oven, I've already changed out of my work clothes into something comfy and had a chat with baby girl about how her day was.<br />
<br />
